Chief executive and founder Nico Simeone has unveiled an ambitious development strategy that includes the launch of three new venues across the city, backed by a substantial three million-pound investment into Glasgow's thriving restaurant scene.

The centerpiece of this expansion is the flagship Six by Nico Merchant City restaurant, set to open its doors on January 15th, 2024, at 64 Albion St, Glasgow. This marks a significant milestone for the brand, following six years of successful operations in Glasgow and the establishment of fifteen sites across the UK and Ireland within the same timeframe. The Merchant City location promises to provide the same exceptional dining experience in an elegant setting, further enhancing Glasgow's culinary scene.

The second addition, Sole Club in Finnieston, pays homage to the original concept that kick-started the Six by Nico journey - 'The Chippie.' This innovative venue brings together two concepts in one space. On one side, guests can enjoy a unique chippie takeaway experience that blends traditional favorites with the culinary team's creativity. On the other side, a 22-seat speakeasy-style fish restaurant will delight diners with daily menus based on the freshest Scottish ingredients. Sole Club is set to open its doors at 1132 Argyle St, Finnieston, in February 2024.

Completing the trio is Somewhere by Nico, an innovative cocktail bar located at 358 Byres Rd, Glasgow, opening in February 2024. Somewhere aims to redefine the bar experience by combining storytelling, multi-sensory mixology, and immersive experiences. Guests will embark on a two-hour adventure, with mixologists as narrators, in a mystical decor that challenges the senses. Somewhere by Nico will offer Scotland's first-ever cocktail tasting experience with paired dishes, promising a unique and unforgettable night out.

Since its inception in 2017, Six by Nico has served over 350,000 customers across Glasgow's various locations, with 49 tasting menus created and over £700,000 raised for charity partner Beatson Cancer Charity.
